Rogan Josh originates from Kashmir, where it was traditionally made simply with oil, spices, yoghurt and very fresh lamb.
The dish seen in most restaurants and takeaways in this country is closer in style to a deep, hearty North Indian lamb curry and this is what I have based our Rustic Rogan Josh on. What this version does share with the original is its distinctive blend of spices and depth of flavour.
If you are not in a hurry to eat, opt for leg or shoulder of lamb, cut into cubes, and slow-cook over a low heat (1 – 11/2 hours). The difference in the depth of flavour is worth the wait and the meal will be cheaper. If you don't have time, adding a little stock as you cook your curry will introduce a richer lamb flavour.

Tikka masala is thought to be a British invention, but its true origins are firmly rooted in India where it began its days as the restaurant favourite, butter chicken. Butter chicken, itself was supposed to be catering for the British love of sauces and so a sauce was made to go with India's most loved tandoori tikka masala. The result was one of the world's favourite dishes.
The chicken itself is normally marinated in a lovely base of spices, lemon juice and yoghurt before being cooked in a searing hot tandoor until smoky and succulent. It is then cut or shredded into boneless pieces and stirred into the masala.

If you have never tried Makhni Daal, you are in for a treat. These are actually tiny black beans and not lentils and have a delicious, rich flavour. This is typically a restaurant lentil curry and one of the most popular ones on the menu. As restaurants don’t turn off their tandoors (barrel shaped, charcoal-fuelled oven) at night they maximise efficiency and place a large pot of these beans on top to simmer, very slowly, overnight to cook them to plump perfection.
In the morning, the chefs make the tarka with lots of tomatoes, whole spices, ginger, garlic and a fair amount of cream and butter for which this dish is named. The Spice Tailor Black Makhni Daal is lighter than the restaurant versions but has deep rich flavour, a tangy creaminess, a slight smokiness and are absolutely delicious. It is addictive! Be warned.

Of all the lentil curries that North Indians eat, this would be the most popular. Tarka refers to the cooking of spices and/or flavourings which is added to an already cooked dish, in this case lentils. This was done to keep those flavours and aromas really sharp but also some dishes take a long time to cook and the tarka can be made alongside and then added in once both are done.
The Spice Tailor Classic Tarka Daal is typical in that it uses yellow mung lentils which give it a creaminess and a buttery flavour as well as channa daal (Bengal Gram) which gives it a nuttiness and texture. Our actual tarka is split in two, the cooked onions, tomato, ginger and garlic sauce and the typical whole cumin seeds and whole red chilli. For that extra special flavour, cook in a little ghee or butter instead of oil.
This is an everyday curry, it would go to work in a tiffin or be served with dinner for many North Indians. It is normally served with Indian flatbreads, a vegetable side and ideally a raita too.

The Spice Tailor Bengali Coconut Curry is based on this favourite and the flavours are well-rounded, soft and lyrical which is fitting as the Bengalis have a deep love of poetry and song.
